As everyone starts their new year resolutions…I’m getting back to eating paleo. I did it for about four months until the traveling and holidays hit. Then KABOOM! I don’t think you’re ready for this jelly. If you only knew what I ate during my travels and at family gatherings on Thanksgiving, Christmas and New Year’s Eve…

Anyway, today is my fifth day on paleo and I’ve officially entered the period of withdrawals. Ohhh yes. Like an addict, I’m experiencing some major cravings for anything with sugar or lots of salt and basically a sudden intolerance with all that exists. I just can’t deal. It’s not just the cravings for cookies, pizza, or fries, it’s the cravings for the simplest things like bread or a sweet latte in the morning.

I admit I took a cookie from the office snack table today. It had coconut and it was so crunchy – then I needed milk to dunk it in. There’s just no end to the doors of opportunity that a simple, light coconut cookie can open for you. Next thing you know, you’re craving for sushi because that cookie was just wayyyy too sweet.

I obsess. About food. Speaking of food…that’s a photo of what I made this week. It’s paleo tacos, also known as lettuce wraps. They were actually filling and tasty because I had lots to work with. I used lean ground beef, paleo taco seasoning, pan-fried portobello mushrooms with taco seasoning and olive oil, avo, jalapeños, salsa verde, tomatoes, black olives, and cilantro.
